Just thought that I would add my 2cents on smoked fish.
The addition of a little veg oil after the fish has glazed will attract more smoke flavor as well as keeping in some of the moisture. drool
I learned this from my Grandma and this was just confirmed by Alton Brown

You can use a brush I have a metal spray bottle that you pump from a kitchen gadget place works great .

Grandma was the one that learned this from . That lady could smoke somthing that came out of the south end of a north bound bear and make it taste good she had it down.
If you get a chance throw a slab of Lingcod in the smoker on pretty low heat it comes out looking awsome and tastes just as good. drool
